What is salsa verde? It’s magical green stuff, right? Pretty much. Not much different than traditional salsa it is made with tomatillos. These are small green vegetables that look like mini-tomatoes. Also much like traditional salsa, the tomatillo base is mixed with onions, chili peppers and other spices to the makers tastes.
Cilantro is made for a discriminating palate. It’s one of those things you either love or hate. For the purposes of making a great taco, you should love it. Love it a lot.
Oaxaca cheese is a gift from the gods. Similar to feta but a bit softer, it makes for the perfect taco topping with it’s light, buttery flavor and ability to melt all beautiful and delicious.
Pico de Galla
This is the traditional salsa you are used to. Tomato based with peppers, onions and spices as the maker sees fit.
Translated roughly, queso means ‘cheese from heaven’. Actually, it’s just cheese. But the heaven part seems pretty accurate. It is tempting to smother your taco in queso but, please, don’t. You run the risk of soggying it all up. Less is always more when it comes to queso.
Hot sauce is strictly to taste but we can’t imagine why anyone would avoid it. It is what makes a good taco a good taco. Do your research and pick a perfect heat level for your palate. Test your limits a bit if you have to. But please, don’t discount the hot sauce!
